Just in time for summer...
Crust:
1 package graham crackers
1/2 cup (1 cube) butter
2 Tbsp sugar
Brownies:
1/4 cup (1/2 cube) butter
1 cup sugar
1/4 cup cocoa powder
2 eggs
1/2 Tbsp vanilla
1 cup flour
1/4 tsp baking powder
1/8 tsp salt
Topping:
1/2 container marshmallow creme
1/4 cup chocolate chips
2 Tbsp butter
Preheat oven to 350.
Melt butter for crust. Crush graham crackers super fine (in food processor or food chopper) and mix sugar, crackers and butter. Press into 9x9 pan and bake for 5-8 minutes. Meanwhile, melt butter for brownies and mix with sugar and cocoa powder. Add eggs and vanilla and mix well. Add dry ingredients and mix until thoroughly combined. Spread brownie batter over the graham cracker crust. Spread carefully so as not to pull up the crust. Bake for 15-18 minutes. Allow to cool and cut brownies into 16 pieces. Spread marsmallow creme on top of each brownie and place on baking sheet. Place under 500 degree broiler for 30-60 seconds, until marshmallow is slightly brown. Melt 2 Tbsp butter and chocolate chips in microwave in 15 second intervals, stirring between each interval. Drizzle over the top of the brownies and serve.
